Perfect Hard Boiled Eggs

Many people think perfect hard boiled eggs are difficult to make, but they are actually quite simple.
- Take up to twelve eggs directly from the refrigerator and set them gently into a medium sauce pan.
- Cover with cold water.
- Place on burner and set to medium-high heat. (On a scale from 1-10 I set my burner to 8.)
- Bring water to a boil.
- When the water is boiling, remove from heat and let sit for 22.5 minutes. (The exact time may vary up to a minute depending on the exact temperature of your tap water. I live in the south and my water is never quite cold. Once you determine the exact time, it should remain constant.)
- Place eggs under cold running water until mildly warm.
- Refrigerate.
